The Minnesota Dept. of Agriculture recently conducted a series of hands on workshops around the state to help local groups better understand how to use LiDAR in support of clean water restoration and protection.
They published this shop manual of exercises, which although the data is not available would still seem valuable to review and compare in terms of the methodology being recommended.

Well, it is certainly nice of them to share – but every GIS “how-to” does not have to begin with “Start ArcMap”
